Hello.....I am a cake decorator and I am also considering selling bread. I know how to make homemade wheat bread with my own ground up wheat. But, that is the extent of my knowledge or skills in bread making. Does anyone have any good recipes or tips for bread making? I would love to have some good recipes other than just plain homemade wheat. I LOVE Great Harvest Bread Co. breads. Does anyone have any of their recipes or similar ones to them? Any help would be greatly appreciated. Thanks!

A couple of tips for bread making.
1. If you use milk in the recipe for the liquid or part of the liquid, heat the milk up first until it gets that skin on top and then let it cool. I dont know why that makes a difference but it sure does make great bread. A lot of older recipes will say the same thing. 2. Also, I love to substitute beer for the liquid also and you can add what ever you like for herbs or spices. Ive made taco bread, italian herb bread, garlic beer bread just to name a few. One of my specialties is spicy mocha cinnamon bread! It has cocoa powder, cinnamon, coffee, and cayenne pepper in it! But I shant tell ALL my secrets! haha

This is my absolute favorite bread recipe (in fact I am working on a batch right now).

This recipe makes three round rustic bread loaves.


1/2 c wheat
1/4 c brown rice
1/8 c oat groats
1/8 c sesame seeds


2 1/4 tsp yeast
2 1/2 c warm water
2 Tbs sugar
2 Tbs oil (vegitable or olive)
1 Tbs salt
6-7 c flour (about)

1. Cook the whole grains together as you would rice, until the wheat swells and becomes semi tender (some of the wheat grains should start to crack open). Set this to the side and let cool to warm before continuing with the bread.

(The adding of cooked whole grains not only adds taste and fiber, but also moisture, and as a result a slightly chewy texture, due to the moisture that the grains had absorbed as they were cooked.)

2. Proof the yeast in 1/4 cup of water with 1 Tbs of the sugar.

3. Combine the proofed yeast, the remainder of the water, the remainder of the sugar, the oil, the salt, and the cooked grains. Mix well.

4. Start to add the flour one cup at a time, stirring. Continue this until the dough starts to pull away from the sides of the bowl and form a ball.

5. Knead the dough for about five minuets or untill it becomes too stiff to work with well. Lay it to the side and let it rest for 15 minuets and continue needing until the dough springs back when you poke it.

(the dough may seem a little odd compared to most doughs when needing as it will be quite lumpy. Also some of the grains will likely pop out as you knead. You can ignore this.)

6. Lightly oil the dough and cover until doubled in bulk (about 2 hrs., depending on the temp.)

7. devide the dough into three portions. Shape them into balls and lightly oil. Place on cooking sheets and let rise until about double in bulk (about 1 1/2 hrs).

8. Lightly slash the tops of the loaves with a very sharp nife, makeing an "X" (this will help with oven spring). Bake at 400 F for about 35 - 45 minutes or untill the top browns and the bottom sounds hollow when thumped.

To make bread on a commercial basis you will need access to a proofer. Also, grocery store flour, etc. does not work on a large scale basis. You need to see if you can get some lessons or observe a baker before you jump into something like bread.

You need to read a lot more about the science of bread and baking and then you can find plenty of bread recipes on the internet.

If your going to make bread for sale in any kind of quantity you will need
A Hobart Commercial mixer-make sure that it operates on single phase electric power not three phase
A good proof box
A bread oven w/ a steam injection feature
and possibly pizza oven for baking on the deck
For used stuff go to www.pierceequipment.com - they are located just west of Chicago and as you will see have a lot of stock
You may also want to take a 100 level baking class at your local community college The first semester always covers yeast breads, danishes, croissants ......
for books : Professional Baking by Wayne Gisslen is a standard text used by many culinary schools and Wiley Publishing is a great source of books for the food service pro.

Ya I love to make bread I know what im puting into it you never know whats in the store bought ones and it smells great while youre baking it.you can make so many kinds
regular old bread but also,banana(I use baby food bananas in mine),punkin bread,zuchini,5 grain.I always find great recipes online but im sure you can even invent youre own great recipe.

Im not sure about basic breads, but mixing mashed ripe banana into a mixture of (half & half of) sieved refined flour & whole-wheat flour with sugar, vanilla, & baking soda & baking makes a wonderful banana bread...

Also, to the flour & baking soda mix, you can add salt, dried herbs, cut up spinach leaves/lettuce/ grated radish for spicy bread

there are tons of recipies out there. One is make bread the way you know how only add smashed up over ripe bannanas for bannana bread yummmmmy
