My ex-mother-inlaw use to can a soup mix containing all fresh vegetables. Tomatoes, okra, corn, onions, green beans. All you had to do was open it, pour in in a saucepan and add meat. Hamburger is suppose to work really well.

Peel and chop tomatoes into a large pan. Add all the other ingredients you mentioned plus chopped potatoes, green peas carrots and whatever you want. Bring mixture just to the boil in an open pan. DO NOT USE ALUMINUM it will darken your vegetables and give them a funky taste. Wash quart canning jars in hot soapy water and rinse well. Put new tips and bands into another pan and cover with warm water. Let simmer on stove while filling jars. Get a funnel and fill each jar leaving 3/4 inch space at top. Add 1 teaspoon salt to each jar. Wipe off any spills and put lid on and screw band down tightly. When all jars are filled, put into canner or large deep pot with rack that has been filled 1/2 full with warm water. After placing the jars in canner, finish filling with warm water just to cover tops of jars. Cover and bring to a boil. Boil gently for 3 hours. OR if you have a pressure canner, follow the cooking instructions.
I usually add a teaspoon of sugar to each jar to cut the sharp tomato taste.

You need to can it using a pressure canner.

I repeat USE A PRESSURE CANNER!

There are too many low acid veggies in that mix to be safely canned in a water bath, no matter how long you have the jars in there. Also anything that includes meat needs to be pressure canned. If not you could just end up with a batch of botulism soup.

Get the Ball Book to home canning or follow the link below to the home food preservation website. They offer a free online course that teaches you all about canning safely.

If you do decide to start canning, don't be afraid of the pressure canner. People will tell you all sorts of 'scary' stories about them. Don't let their fear scare you out of trying.
They are quite safe & I use mine all the time. There are 2 different kinds, a weighted gauge & a dial gauge.
I use a weighted gauge, it's loud & sounds unearthly but you KNOW when pressure is reached.
Dial gauges need to be checked at your county extension office every year to be sure it's calibrated correctly. Also it takes more vigilant watch.
Personally, I'd rather keep an ear on it. ; )

You want to look up The Ball Jar "Blue Book." It's something of a canning Bible. Canning a soup mix is pretty simple, but if you don't follow proper sterilization procedures, you'll need up with food poisoning or worse.

My wife and I have been making jam, jelly, pickles and even canned sauces for a few years now.

I also recommend a book called "Small Batch Canning."

I would think that canning soup is just like canning anything else.

she probably used mason jars. you can det them at target and walmart.
