I buy whiting fillets at Costco. They are very good. How I make them, is I wash them, drain on a paper towel. Then make a flour mixture of flour, cajun seasoning, pepper and salt and paprika. Just dip each fillet and fry in very little vegetable oil in a teflon frying pan. You don't need alot of oil, because the fillets are thin and they cook very quickly. 3 minutes on each side, and then drain on paper towels. Then you can make your sandwich. Add lettuce, tomato and mayo.

I'm thinking that whiting is a thin, white fish? I'd suggest that you make a cornmeal breading and fry them for sandwiches. Here's a possible recipe:
White fish
1 cup cornmeal
1/2 cup white flour
1 tsp season salt
1/4 tsp white pepper
1 egg
1 T hot sauce
1/2 cup water
Good Canola or Vegetable oil
Mix cornmeal, flour, salt and pepper together and put in a shallow dish. Blend egg, hot sauce and water until frothy. Dip fish in egg mixture and roll in cornmeal. Fry until golden brown in hot oil. Drain before putting on hoagie rolls.

Fry them. Use Andy's fish batter/breading (or any kind of breading you like) and deep fry the fish in hot vegetable oil. Drain the fish on paper towels, and put them on your bread. Enjoy.

Some I don't feel like to mix things, so I buy beer batter its so easy to do....all you have to add beer or water or half beer half water. Then fry in oil cook until golden brown then flip over cook until golden brown then you done.

I would lightly poach them, and drain.
Flake and season to taste, adding a little vinegar or lime juice.
Cool.
Make a sandwich, which will not be soggy
