Sulfites is used to indicate the presence of various sulfurs. Sulfur dioxide has been used since antiquity for sterilizing wine barrels and preserving wine, prventingbacterial damage and etc. Sulfurs are also naturally produced as a by product of fermentation.

Do they cause headaches? No, there is no evidence. A very small number of people who are asthmatic react badly to sulfur, but headaches are more likely to be caused by alcohol.

actually both. sulfites are a by product of fermentation it is even found in bottled lime/lemon juice. however it is also added to preserve freshness
