we were asked to sing and I'm just looking for more ideas. we're talking about contemporary christian, praise/worship, hymns, gospel or something along those lines.

You Raise me Up, Oh Happy Day,His eye is on the Sparrow,Morning has Broken, I think John Denver's Follow Me despite being a love song is probably one of the best ' non religious' relgious songs I've ever heard. You might do This is My Story, The Church is one Foundation, This is my Father's World, How Great thou art.
Or find one hymn or gospel song from each era of his fifty years and sing those.

A rosary, crucifix, or Bible would be nice - but also somewhat cliche. There are Christian stores all over the country. I've never been in one but I'm assuming they might have a section for Catholics. Also, Catholic church I attended as a child had a gift shop. They had tons of things that would be appropriate gifts for a nun.

You could get a little sappy and go with "Precious Memories" or perhaps a little more upbeat could be something like "Open the eyes of my heart" which I gather your pastor has/is doing.
