I have almost a pound of it sitting at home and want to know how else I can eat it besides just piece by piece.

curd is excellent as a melter in a baked meatball sandwich or as an addition to a mixed green and dried cranberry salad. Anywhere you might crumble a cheese you can use you curd instead; pizza, souvlaki, lasagna, grilled cheese and of course Quebec's gift to the western world- poutine (french fries, curds and gravy)
