Ok I have a chicken breast and i dont know what to do with it, i thought about breading it but thats usually cooked in a little oil and im trying to cut down on fats/oils, would it be the same if i cooked it on a grill or even microwave? (lol-seriously i cook chicken in there all the time)...

If not, i need some other suggestions on how else i can cook the chicken!!!

Try not to microwave it. Chicken tends to come our rubbery and you won't have a crispy crust or browned exterior.

I recommend baking it after coating it w/ honey mustard, ranch dressing, plain yogurt seasoned w/ spices, garlic salt, onion powder and herbs or bbq sauce.

You can bread it w/ crushed corn flakes, matzo meal, cracker meal, panko or bread crumbs.

Then bake it at 350 degrees F.

A-1 makes good bottled marinades. Teriyaki sauce is a good marinade. You can either bake or grill the chicken after marinating it for a couple of hours.

You can spray the chicken with PAM. Any flavor. It doesn't matter. Pam has no calories and is fat free.
After spraying the chicken, sprinkle with salt, pepper, onion powder, garlic powder and italian seasonings or lemon pepper. Coat it with mashed up RITZ crackers or any other crackers you might have. Even crumbled crutons work.

If you don't have a jar of Italian seasonings all mixed together, use oregano, rosemary, thyme or basil or any combination of those. You can use them all or just 2 or 3. It will still taste delicious. Maybe sprinkle a little paprika on it too for color and added flavor.

If you have a bottle of Italian dressing, that works too, to flavor the chicken. OR ANY kind of salad dressing you may have. Ranch dressing is good too on chicken.

Bake it in a 375 degree oven until done. It depends on your oven but it should take about 35 to 40 minutes.

You can also have a lower in calorie chicken breast by using THIS recipe:

Squeeze lemon juice over the breast. Spray it with PAM. Sprinkle Salt, pepper, garlic & onion powder, then bake.

TIP: To REALLY make the breast tastey, cut diagonal slits in it and sprinkle your seasonings inside the slits as well as the outer most part of the breast.

If you want to cut down on fat, there's no need to use anything like that. Simply season both sides of the chicken breast, after trimming any fat and skin off it, with salt, pepper, and any other flavor you feel like...lemon or orange zest, rosemary, garlic powder, onion powder, oregano, cilantro, paprika, etc. And then bake it in the oven at 400 degrees F for about 20 minutes (until no longer pink in center) or grill it as you mentioned. No fat involved. If you want a "breading," you can make a crust with some bread crumbs, parmesan cheese (if desired), dijon mustard, and some oregano...put it on top of the chicken about halfway through cooking.

What I like to do is take the breast, open up a large piece of aluminum foil, put the breast in the middle of the foil.

Pour on just a touch of oil or butter, season with salt, pepper, little garlic powder, whatever you like.

If I have any veggies like potatoes or carrots, I slice up a few pieces and put on top of the chicken.

Seal up the aluminum like a tent and bake in the oven at 350 for about 45 minutes, probably doesn't need to cook that long but that's how long I leave it in.

Chicken is moist and flavorful and cleanup is a breeze!

I am also trying to be careful about my consumption of fats/oils. I dip the chicken breast in orange juice and then into 1/2 cup of corn flake crumbs that I have seasoned with garlic, onion powder and a some pepper, with a little paprika for color.

Bake in the oven, uncovered, for about 35 to 45 minutes at 425 degrees.

Following the same recipe, I sometimes use Shake & Bake instead of the corn flake crumbs, also very tasty.

I prepare this recipe for the family and they all enjoy it.

My best suggestion would be to bread the chicken using homemade bread crumbs. example: put cornflakes in the blender or food processor add salt, pepper, onion powder and garlic powder, quickly brown the breaded chicken in a skillet with extra virgin olive oil then bake it in the oven on 350, for about 30-45 minutes, that way you still have the great taste of breaded chicken, but not nearly the fat!

If you bread it try cooking it in the oven on 350 F until done. You can cook chicken in the oven, stove top, grill, fry. Tonight I'm cooking my chicken in the oven (usually takes about 30 minutes). I'm not sure about cooking chicken in the microwave though...

You may need to buy ingredients for this, but if you can't do it tonight, seriously try it in the future - delicious and easy:

2lbs boneless, skinless chicken breasts
1 c bread crumbs
1/3 fresh grated Parmesan cheese
2 Tbspns minced fresh parsley
4 tspns Dijon mustard
1/2 tsp worcestershire sauce
3/4 c butter melted

Mix breadcrumbs, cheese and parsley in a dish. Mix mustard, melted butter and Worcestershire sauce together in another dish. Dip breasts into mustard mixture and then coat with breadcrumb mixture. Bake in a preheated oven at 350 degrees for 35 - 40 minutes.

A secret to breading chicken is not to use egg, then bread crumbs. But instead to use milk, then you can put corn flakes over it and it'll taste like KFC the healthy way. You can do it on chicken pieces and remove the skin or use boneless skinless chicken breast. It makes a very healthy baked chicken that's yummy!

poke holes in them while they are raw. with a fork. pour italian dressing on them and bake in the oven. mmm very good.
