Is job opportunity out there and where do they work?

Yes, materials engineering can find work in many industries. I moved on to other fields for over two decades, but many of my friends from the Materials Science and Engineering school at Cal Berkeley have been doing variety or work: from process engineers for big semiconductors companies, to reliability engineers, metallurgists, ceramicists. They have among the most stable employment as compared to others who work in EE or CS, yet the pay increase seemed to me a bit slower.

With a foundation education in materials science, however, many of my classmates have gone on to study other engineering fields. And the insights they have with materials seemed to have enabled them to become exceptionally productive contributors in other engineering fields: IC design, RF microwave circuit design, aerospace, communications, software, etc...

Yes, Material Engineering is a good field. Material Engineers work in many different fields, from helping to design the alloys for planes to the materials for professional tennis racket. I'm very sure there are job opportunities out there. Material Engineers work almost everywhere. If you mean environment by this question, then you would be talking about labs.
