I have about 4 or 5 over-ripe bananas and I am looking for some good desserts to make with it. I thought about banana bread or muffins but i make those all the time. Im looking for something different

Thanks for all the answers. I wrote all the good ones down and I ended up using Jeanette's idea of putting the bananas into a cake mix, cream cheese frosting and walnuts.

Add them to your favorite yellow cake mix while blending. Add candied walnuts to the mix and bake in a bundt pan. Spoon a cream cheese glaze over finished cake (cooled and out of pan) and top with more candied walnuts. Yum!

Also, banana milkshakes are refreshing and wonderful!

When they're over-ripe, remember that you can peel them and put them in the freezer for later use.

I've also been told that bananas can be put in the fridge to stop their ripening process. They are supposed to taste just as they would. I've tried this, and definitely the ripening process has been stopped to some degree.

But, the banana did not taste quite that good, much less just like it would have tasted as on the day you put it in the fridge vs. eating it when you normally would like to have eaten it. Give this a whirl, it may work for you, however.

These are banana cookies. Along with being very healthy, they are so delicious and don't call for eggs! Enjoy!! INGREDIENTS 3 ripe bananas 2 cups rolled oats 1 cup dates, pitted and chopped (Raisins work just as well) 1/3 cup vegetable oil 1 teaspoon vanilla extract DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). In a large bowl, mash the bananas. Stir in oats, dates, oil, and vanilla. Mix well, and allow to sit for 15 minutes. Drop by teaspoonfuls onto an ungreased cookie sheet. Bake for 20 minutes in the preheated oven, or until lightly brown.

Banana Bars (think brownies)

* 1/2 cup shortening
* 1 cup white sugar
* 1/2 cup milk
* 1 teaspoon vanilla extract
* 1 1/2 cups all-purpose flour
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
* 1 very ripe banana, mashed
* 1 teaspoon lemon juice
* 1/2 cup chopped walnuts
* 2 tablespoons butter, melted
* 1 teaspoon vanilla extract
* 2 cups confectioners' sugar
* 1/2 ripe banana
* 1/2 teaspoon salt
* 1/4 teaspoon lemon juice

Banana Sorbet


INGREDIENTS:
1 cup white sugar
1 cup water
1 cup mashed banana

DIRECTIONS:
In a small saucepan, stir together sugar and water. Bring to a boil, then remove from heat and allow to cool.
When the sugar syrup is cool, stir in bananas. Pour into a freezer - safe baking dish. Freeze for 3 to 4 hours, until set at the edges.
Remove from the freezer and transfer to a mixing bowl. Use an electric mixer to beat until smooth. Return to the freezer until gently set, at least 2 hours.

girl you have to make my grandmas banna cake it is the bom and its the top desert at our family resturant here is the recipie

INGREDIENTS:
1 cup shortening
2 1/2 cups sugar
3 cups all-purpose flour, sifted before measuring
1 1/2 teaspoons baking soda
1 teaspoon salt
4 egg yolks, beaten
6 tablespoons buttermilk or sour milk
2 teaspoons vanilla extract
2 cups mashed bananas
1 cup chopped pecans
1 cup chopped raisins
4 egg whites, beaten
PREPARATION:
Cream shortening and sugar. Combine dry ingredients in a separate bowl. Add dry ingredients to the creamed mixture alternately with egg yolks and buttermilk. Stir in vanilla, mashed bananas, and chopped pecans. Fold in beaten egg whites. Spoon batter into a greased and floured tube pan; bake banana cake at 325° for about 1 1/2 hours.
Serve with whipped cream or ice cream. If desired, drizzle cake with glaze or frost when cooled.

mix with dried oats and dried fruit for a granola and bake it. sometimes I put bananas (blended up) as a subistitute for oils but I mix it with a tad bit of milk. I freeze bananas too and use them in protein shakes

do a search for a reciepe that uses that i make cookies that uses oranges the juice and coconut and bananas oats they are really good. I am not at home at the moment so i cannot give the reciepe to you.
