Being a poor college student i only have the following things in my fridge; Miracle whip,Mexican style cheese,potatos, seasond salt and eggs. Any suggestions for a making a tasty meal?

Cheese and Potato Frittata

Boil the potatoes in a pot of water until they are easily stabbed through with a fork. Pour off the water and then mash them up with some butter and season salt. You can substitute butter with a bit of miracle whip if needed,( just make sure the potatoes aren't piping hot! and throw in some shredded cheese. Mix together and serve immediately.

Make some scrambled eggs to put on the side.

I too am a college student! I live off of the vending machines! LOL Or I do occasionally scrape up enough to buy myself a cup of soup from the cafeteria!

My suggestion to you would to buy lots of Ramen Noodles, Mac and Cheese, Canned Veggies, Rice, Eggs, Bread,Potatos, Fruit, Cheese, Yogurt, Canned Chef Boy ar dee........ those are fairly cheap in the store!

I would "bake" the potato in the microwave. Let it cool enough to touch then dice it into bite-size pieces. In a pan brown the potatoes for a few minuted then add beaten eggs and cheese. Scramble the eggs with the cheese and potatoes until cooked through. You can add season salt and/or table salt to taste.

Peel and slice potatoes thinly, fry in skillet with seasoned salt until golden brown and turn off heat. In a bowl , mix the eggs with one cup of the cheese. Turn on skillet to medium heat and pour mixture over potatoes. Keep turning the potatoes and eggs until eggs are no longer runny. Eat with mayo as a dip or not.

If you have no bacon and cant get any, feel free to leave it out. If you have other meat, like ham, turkey, etc, feel free to put it in. This makes a great meal.

* 1 pound bacon, cut into small pieces
* 3 pounds peeled and shredded potatoes
* 1 pound shredded Cheddar cheese
* 12 eggs

DIRECTIONS

1. In a large skillet, fry bacon pieces on medium heat until brown and a little bit crispy. Set aside bacon.
2. Cook and stir shredded potatoes in bacon drippings on medium heat until tender.
3. In a large bowl, whisk eggs, and salt and pepper. Add eggs to potatoes. Reduce heat to low. Cover and simmer for 10 minutes. Sprinkle cheese and bacon pieces on top of potatoes. Let cheese melt. Serve.

Try baked potato w/ mustard, and/or lots of butter, if you are watching your weight use a substitute. If you drench a baked potato with butter and salt and pepper it is very tasty. dont forget about egg salad sandwich, for a something different mix egg and mayo with a squeeze of sriacha?(hot sauce) adn use as dip, very good.

Is It a Baked Potato or Potato Salad?
It was 1987, I was living in my first apartment, and I had invited my first company over for dinner, a friend from work and his girlfriend. I had planned on providing everything for dinner that night, and I was completely shocked when my company brought some food with them. Her potato salad tasted so much like baked potatoes, only it was cold and required no effort on my part to make it ready to eat. It was so good that I had to ask for the recipe. I have made it this way ever since. This recipe is forgiving. So, try to keep the general proportions correct and don't be so worried about exact measures.
2 servings 3¾ hours 3 hours prep

1/3 lb potatoes, any variety you like
1/8 medium onion, medium dice
1/8 cup fresh parsley leaves, loosely packed then roughly chopped
1/8 cup sour cream
1/8 cup mayonnaise

Wash (DO NOT peel) your potatoes and cut them into approximately 1-inch thick wheels.
Cover wheels in a pot of water and boil until the potatoes are tender.
Drain and cool potatoes in a large mixing bowl.
When potatoes have cooled, combine all remaining ingredients in the bowl with the potatoes.
**If you want to season the entire batch before serving, consider including any combination of the following before mixing all the ingredients together - salt, pepper, lemon pepper, garlic powder. And remember a little bit of seasoning in the mix tends to go further than seasoning added to each serving.
If you are lucky enough, you will get everything evenly combined and still have some chunks of potato in the mix. If you don't, it still tastes great.
Cover and chill for at least two hours before serving. This can be made a day or two in advance of serving.
Prep time includes cooling the potatoes and chilling the salad. Cook time is split between cooking to potatoes and mixing the salad.

Potatoes With Eggs and Cheese
This recipe is easy, delicious and you can't go wrong. once you try it I know it will be a favorite.
4 servings 35 min 20 min prep

3 potatoes (depending on how much you want)
1 small onion, chopped
4 eggs, scrambled in a bowl
1 cup shredded cheese
2 tablespoons oil
salt and pepper
4 flour tortillas
pickled jalapeno peppers (optional)

Peel potatoes rinse and slice thinly I usually cut them in half then quarter and then slice.
In large skillet add oil enough to cover bottom,.
Add potatoes and onion, let cook for about 15 min add some salt and pepper to potatoes, turning potatoes slowly so they won't turn to mush,
After there softened, add eggs. And turn just to cook egg, about 3 minute
Then you add your cheese and cover your skillet,letting your cheese melt about 1 minute turn off stove so it can melt with the steam.
Heat your tortillas on stove or microwave, add some of your egg mixture and jalepenos if you want spicy and wrap like a burrito. or eat open on a plate,.

Perfect Microwaved Scrambled Eggs and Cheese for One.
Scrambling eggs in the microwave is a one dish affair. No muss, no fuss. These come out perfectly and taste delicious. Found this in an issue of Everyday Food. Microwave cooking times vary and mine actually needs 55 seconds at each step instead of the 45 seconds listed. Don't add extra salt until you've tasted it.

2 large eggs
2 tablespoons milk
1/8 teaspoon cayenne pepper
1/4 teaspoon salt
1 scallion, thinly sliced (green onion)
2 tablespoons cheddar cheese, grated
1 cherry tomato, quartered (optional)
salt and pepper

In a large (10oz) microwave-safe custard cup or ramekin, combine eggs, milk, cayenne pepper, and salt. Stir in scallion.
Microwave (uncovered) on high for 45 seconds; stir with a fork. Continue cooking until eggs are almost set, about 45 seconds more. Remove from microwave.
With a clean fork, stir in cheese; cover with a paper towel. Let stand until cheese has melted and eggs are set, about 1 minute. Top with tomato and season with salt and pepper to taste.
