Depends on the aquantiance. I just saw a friend at the grocery store who I have'nt seen in months, so I bashed my cart into hers to get her attention. We had a good laugh!
If it's someone I know I usually say "Hi" but there are some people who just get a nod.

Depends on how crowded the street your on is: rather crowded then just a nod of acknowledgement should be good enough; not too crowded then a simple "Hello" or "How's it going?" as you continue to walk will be good enough.

I think the "how are you" "good how are you" is best. If you only do the "I know you" nod, and not say anything with it, then they may feel kind of weird that you didn't say how you are doing, if even casually. Do you know what I mean?

Depending on who it is, either exchange Hi's and how are you's as we walk by, or just nod hello.

I would smile, and if the other person looks willing for a quick chat, I ask them how they are, how their family is, etc. If they don't, I just smile and say hello, and keep walking.
