Dandruff comes in two forms.
First you have the dry scalp version. This is the most common. Not washing your hair will not fix this problem.
Second is a greasy or waxy version. This is a scaly condition of the skin. The scales become mixed with the natural oil produced in the skin causing the to stick to the scalp in patches.
Your first step would be to visit your doctor. The doctor will let you know if you can just use an otc dandruff shampoo or need a precription type.

You might have psoriasis of the scalp. Head & Shoulders never works for it (my mom has the same thing... the white flaky stuff, although the doctor told her it was psoriasis and not dandruff). Use selsun blue like 2x a week. Don't use it any more than that (the regular bottle... I'm not talking about Selsun Salon). Then again, you can try the Selsun Salon brand. I haven't checked reviews of it though.

Personally, I've had the same issue. I've tried every anti-dandruff shampoo available over the counter. Nothing worked. Not even the really expensive stuff. However, I've also found that Suave anti-dandruff actually works. I will confess, I'm a guy, and my hair is different, but it works.
Another alternative is to ask your doctor for a prescription shampoo, although you might need to speak to a dermatologist, I confess I'm not sure.

it might be product build-up, when you take a shower, make sure everything gets washed out
