Is my cousins daughter my 1st once removed, or 2nd cousin?
Also, is it ok to have sex with her or is it still "too close" in terms of relations? Thanks.

your cousin's daughter is your 2nd cousin. It's not to close in legal terms, but still gross to have sex with her.

She is your second cousin and yes, too close in relation tohave sex unless she is yourcousin's step-daughter or adopted daughter.

2nd cousion. Well I can tell you that in Islam it's perfectly fine to marry your cousion. However if none of the family is Muslim and your in the USA you could be in jail for that.
