CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.

I think you have quite a few options...
A grilled chicken and mushroom salad, or
grilled chicken and onions and mushrooms over mashed potatoes or next to a good baked potato. Add some sour cream and a can of mush soup and pour it all over rice or pasta.
Stir fry it, add veggies if you have or want or just plain. Serve with rice or as a side to a good sweet potato or yam.
You could even fill a pita bread with grilled chicken, onions and mushrooms....
Make your own pizza with chicken and mushrooms and anything else you have on hand. Top with cheese and you are good to go.
lots, and lots of things to choose from!

I would sautee the chicken in a big skillet with a bit of canola oil, add the mushrooms, sliced, and an onion also sliced. (+ salt & pepper)
Once everything's cooked through and golden, add about 1 or 2 tablespoons of paprika, stir everything around, remove from the heat then add about 1/4 cup of sour cream to make a sauce. (Ive used regular cream too when I didn't have sour cream, it was good too! you can also use yogurt but if the pan is too hot it will get weird.)
There. I serve this over pasta (usually egg noodles) with something green on the side like broccoli or green beans.

Brown fresh mushrooms in butter (the amount of mushrooms depends on how many pieces of chicken you use). Add chicken broth and flour to make the amount of gravy you want (chicken bouillon and water may be used). Add a little flour to thicken it all.
Sweat a little onion in with the mushrooms if you like.
(Or open a can of mushroom soup, and pour this over the chicken with the sauted mushrooms.)

Cook the strips (better if cut into chunks) in a little oil.

Pour the gravy over chicken when done. Salt and pepper to taste. I like a little red pepper to give it some happiness!

Serve! And hold on to your taste buds. They will try to jump into your plate!

I would saute the chicken with the mushrooms and some onions. Add a can of cream of chicken or cream of mushroom soup and 1/2 c of sour cream. You could even add chopped bacon. Serve over rice or pasta or mashed potatoes.
