I was making ailoli- a garlic mayonaise sauce today and it started getting watery. Don't know what I did wrong- perhaps put the oil in too fast....Is there a way to fix it?

Put it in the blender and add an egg. Whip it together until it becomes creamy and thick(that all mayo is..oil& egg)

If you did put the oil in too fast (a common mistake) then you have no choice but to scrap the lot and start over. Once it get's watery, you can't go back without completely unbalancing the flavours - and it won't combine the way it should. Sorry :-) Remember... slowly! lol

Usually in any recipe if you have too much of something, you have to add more of all of the other ingredients in order to balance it out. You could probably use bread crumbs or corn starch to stiffen it up a little bit if you do not have any more of the other ingredients.

Maybe throw in a little flour? It might thicken it a bit.
