Well, obviously, it’s not meant to be taken literally. It refers to any manufacturers of dairy products.

It's a standard religious metaphor for the Holy Spirit, once thought of manifesting Itself in the final part of digestion. It's where we get the slang, 'cut the cheese', as well. The latter, surprisingly, is a malapropism from the Middle English, 'Clacht Bea tew Chease', which means 'Glory to God in the form of the Holy Spirit' and was said when anyone had passed gas.
