A person's immigration status could be "citizen" or "lawful permanent resident" or "lawful temporary resident" or "visitor" or one of several other statuses.
An "adjustment of status" is the formal term for changing from one status to another, such as gaining or losing "lawful permanent resident" status.

To explain it in plain English, it means that a person applies for permission to stay and work in the USA permanently. He/she applies for a 'green card' or permanent residency in the USA.
If granted, then he/she will be authorized to live and work in the USA on a permanent basis. They can also bring their immediate relatives to the USA.
Only people physically residing in the USA can apply for 'adjustment of status'. If your relative is abroad and you want to bring them over to the USA, then you shall apply for an immigrant visa (which, if granted, will give them a green card and permanent residency).

A person applies for "Adjustment of Status" to get a green card if he/she is already in US with some sort of visa.
