I am having a party at tomorrow afternoon. I would like to save some time by cutting up the homemade veggie tray tonight, I just want to make sure they stay tasty.

Just refrigerate the veggie tray after you're done preparing it. That way, they will stay fresh and crispy.

I would try to pour or spray some lemon on them so they won't get brown or wilt. Then you can give them a quick rinse in the morning. Lemon is a natural preservative and will preserve your food.
