If the 1965 is a big block, thats the best investment. They did not make many big block convertibles in 1965. But you really can't go wrong with any of those years. Matching engine numbers and any documentation makes the car more investment worthy.

1967 was the last year before pollution requirements started to get phased in. So I would vote for the 1967 since after that horsepower ratings started to slide and performance decreases for the most part. There are some exceptions. But once 1971 hit it was all down hill. We had to use unleaded gas in 1973 and finally the gas stations quit selling the leaded fuel.

Cars aren't good investments. Unless it was owned by a celebrity who died in it.
