Loads of different ways to make them. They are usually made with fine mince (pork or beef mostly) with finely chopped or miced onion, some mashed potato (not sure which herbs tho) bound with egg, dusted with flour coated in egg, another coat of flour then fried. Chip shops deep fry them but at home you can shallow fry or deep fry.

Might be a Welsh delicacy - I remember them too - delicious! My mum used to make the most Divine ones.

Mashed potato
Tinned salmon
seasoning
bound together with beaten egg
shaped into rissoles, with flour.
fried in shallow oil.

Fantastic - must make some soon. I haven't thought about them for years, thanks for the memories!
