Is it still as good to eat, and if I should preserve it better, how can I do it?

Humidity or a speck of honey on the wall of the container crystallized which propagated through the rest of the batch.
Also, raw honey tends to crystallize quicker than supermarket honey. The supermarket honey is pasteurized and heated to a certain temperature to ensure a specified moisture content.

Just reheat your honey which will melt all of the crystals.
Try to store in an airtight containter and, if possible, try to keep the sides of the container clean.

Scientifically, honey is a super-saturated solution of sugar. A super-saturated means there's more sugar crystal in the liquid than what normally can be dissolved. Another way of looking at it, a super-saturated solution is just on the ragged edge of solidifying. A stray crystal just pushes the solution over the line and solidification/crystallization occurs.

All it tkes is a single crystal to form and the rest of the jar will follow rapidly. This is usually caused by moisture in the jar of honey or if there is some honey stuck to the side of the jar when it is half full can promote crystilization. To reduce the chance of your honey turning to crystals make sure the jar/bottle is tightly sealed, try to make sure that there is no honey stuck on the inside walls of the jar if not completely full. Not to worry though crystalized honey is not at all bad for you, and can be turned back to its natural state quite easily.

honey is the only food that will never spoil!! When honey crystalizes all you need to do is heat it up and it will turn back to its natural state. So once again honey in its pure form will never mold, spoil, go rancid, or promote any bacterial growth. It is truely a wonder of the food world.

So the answer to your question is yes you can eat honey in its crystalized form, but if you want honey in its natural sate place bottle of crystalized honey in a pot of boiling water and melt it back to a liquid. Make sure the bottle of honey is tightly sealed before doing this.

It's mainly because of oxydization, when honey is in contact with air, it "takes" missing electrons and solidify by forming crystals.
