Cook's brut ... It tastes nasty alone, and not even good enough for a weak mimosa. Is there a recipe that I can use it in? or should I just toss it (sort of against my morals)?

You can make a champagne risotto. Saute some shallots in butter, add arborio rice (about a cup) and saute until golden. Then add about a 1/4 to 1/2 cup of champagne and cook until most of the liquid is gone. Then add warm chicken stock to the rice mixture, slowly....only do about a half cup at a time. Cook until rice is creamy and al dente. Then take off the heat and add a squeeze of lemon and some grated Parmesan cheese. It's really good and, since the rest of your ingredients are good quality, it will make up for the lackluster champagne!!

How cheap is the champagne? Let it go flat and cook with it like any other wine. An old friend of mine would mix it with ginger ale and give it to his kids. Okay he wasn't a good parent but his kids loved him. You can let it turn to vineger. Years back I would get red wines from North Africa. Very good table wines with no preservatives, what I didn't drink over dinner became the best wine vinegar within a couple of days. Use the champagne instead of water when making jello. If the champagne is undrinkable then throw it away, otherwise don't waste it, remember as my friend would say to his kids "drink up because there are children sober in Korea"

Weak champagne defeats the purpose of bubbly.

Take a deep breathe and poor it out...it won;t even be good in a Mimosa. Weak is weak and thusly, weakens everything it comes in contact with.

You;re right about Cooks...wouldn't use for anything other than a very, very informal Mimosa.

If it fails the mimosa test it probably should go down the drain.

But, if it still has some fizz you can made desert - add a scoup of rainbow sherbet to it and a splash of 7 up or ginger ale and have a float. We make a punch with cheap champagne, ginger ale and rainbow sherbet for bridal and baby showers and everyone loves it.

HELLO,if you really don't want to just dump it .go get you a nice pork roast, pork will work well with the cheap stuff.(ha,ha).put it all together.and let set over night, the next day, pop into oven. you got dinner.just a thought. ladyhalk.
