It is traditionally Sabado or Saturday. It can also be called dia de reposo. Day of rest. See Exodus 16:23 Spanish Bible version Reina-Valera 1995
Hope that helps.

The Hebrew word ("means "the [day] of rest (or ceasing)", as it entails a ceasing or resting from labor.
Originally denoting Saturday, the seventh day of the week, or, more precisely, the time period from Friday sunset to Saturday nightfall, the term "sabbath" can now mean one of several things, depending on the context and the speaker:
Saturday as above, in reference to the Jewish day of rest, also observed by some Christian groups;
Sunday, as a synonym for "the Lord's Day" in commemoration of the resurrection of Christ, for Christian groups;
Any day of rest, prayer, worship or ritual, as in "Friday is the Muslim Sabbath
Considering all of the above, it would mean:
Sábado o DÃa del Descanso
Domingo o el DÃa del Señor
DÃa de descanso, oración y ritual de adoración, como el Viernes del Sabbath Musulmán.
It is NOT sabático = Sabbatical
like in sabbatical year = año sabático.

If you mean for jewish people, they call it the same way: sabbath or shabat.
You can see the word used in a text in Spanish here:
