Oatmeal means coarsely ground oats. Rolled oats are oat groats that have been rolled into flat flakes under heavy rollers. Bran is the hard outer layer of cereal grains. The germ is the heart of the cereal kernel. As for substitutions, it may depend greatly on the recipe (or maybe just your preference). As to nutritional value, oats are an excellent source of thiamin, iron, and dietary fiber and contain the only anti-oxidants that are believed to have properties which help to protect the circulatory system from arteriosclerosis. Wheat bran offers vitamin E, folic acid, phosphorus, thiamin, zinc and magnesium. Since they maintain different nutritional values, I think it would be a good idea to include both oats and wheat germ in your diet.
