Well, I don't know how to make cheesecake. Let me start off that way. But. My mom used to make some killer stuff. She took a cheese cake recipe, and instead of putting it in a pie plate or whatever, put it in cupcake cups. That's the first thing I thought of when I saw 'appetizer cheesecake'. Just an idea.

Fudge Truffle Cheesecake
Crust:

1 1/4 C. chocolate wafer cookie crumbs

1/4 C. sugar

1/4 C. melted butter

Mix crust ingredients and pat into a 9 or 10 inch spring-form pan. Bake 10 minutes at 350°F.

Filling:

12 oz. melted semi-sweet chocolate

24 oz. cream cheese

1 can sweetened condensed milk

4 eggs

1 t. vanilla

Mix cream cheese and condensed milk together until smooth. Add eggs and beat until fluffy. Add chocolate and vanilla. Pour into crust.

Bake at 300°F. for 1 hour 5 minutes or until center is set. Cool and chill until ready to serve.

Okay, I am not sure if I got this recipe from Kraft.com or not. But if you get a muffin pan and layer it with cupcake paper holders then stick a vanilla wafer on the bottom for the crust and then add your favorite cheesecake recipe and top with you favorite topping like cherries, strawberries, blueberries, or even crushed oreos. Then refrigerate until serving.

Cream Cheese Tartlets

2 (8 oz) packages cream cheese, softened
1 cup sugar
1 teaspoon pure vanilla extract
2 eggs
12 vanilla wafers
1 (21 oz) can cherry pie filling or other pie filling (also good w/ blueberry, apple, or chocolate pudding)

Preheat oven to 350 degrees F.
Place a paper cupcake liner in each cup of muffin pan. Beat cream cheese with a handheld electric mixer until fluffy. Add sugar and vanilla, beating well. Add eggs, 1at a time, beating well after each addition. Lay a vanilla wafer, flat side down, in each muffin cup. Spoon cream cheese mixture over wafers. Bake for 20 minutes. Allow tarts to cool completely. Serve with cherry filling on top, or pie filling of your choice.

Shrimp Scampi Cheesecake Appetizer

INGREDIENTS:
1 tablespoon olive oil
1 onion
6 teaspoons minced garlic
1 pound fresh shrimp, peeled
and deveined
12 shells puff pastry, baked
4 tablespoons butter or
margarine 3 (8 ounce) packages cream
cheese, softened
4 eggs
1/2 cup heavy cream
16 ounces smoked Gouda,
grated
2 teaspoons salt

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large skillet over medium-low heat, warm oil and saute onions and garlic until onions are translucent; set aside to cool. When cool, pour off liquid reserving garlic.
3. Cut shrimp into 1/2 inch pieces, reserving 12 uncut for garnish. In a large skillet over medium-low heat, melt butter and add reserved garlic and all shrimp; cook shrimp for 2 to 4 minutes or until done.
4. Remove center circle and a small portion of inside of cooled puff pastry shells.
5. In a medium bowl, beat cream cheese until creamy; add one egg at a time and beat until well mixed. Add cream, Gouda, onions, shrimp and salt.
6. Spoon filling into puff pastry shells.
7. Bake in preheated oven for 20 to 25 minutes or until filling is browned on top. Garnish with whole shrimp and chopped chives; serve.

CANDLELIGHT SMOKED CHEESECAKE

2 lbs cream cheese softened
1 cup sour cream
1/2 cup whipping cream
3 eggs
1 tsp fresh squeezed lime juice
3 (3" thick) slices french bread
1 tsp melted butter
1 lb smoked salmon, boneless/skinless, sliced very thin

TOPPING:
8 oz cream cheese
1/2 cup sour cream
Blend cream cheese & sour cream till smooth. Use as spread. Makes about 1 1/2 cups.

Place softened cream cheese in mixer till smooth. Using first speed add sour cream a little at time. Blend in whipping cream on first speed till lumps are gone. Add eggs 1 at a time, mix well. Add lime juice & dill. Set aside.

Chop French bread in processor till fine. Add melted butter; mix 5 seconds.

Place crumb mixture in 9" springform pan. Spread evenly w fork over bottom of pan. Don't make crust too thick. Bake at 350 till golden. Cool.

Place layer of cream cheese filling to cover bottom of pan. Place thin slices salmon on top. Repeat till pan is full, ending w cream cheese mixture.

Bake at 300 2 hours. Turn heat off, let cake remain in oven 1 hour longer. Chill overnight. When ready to serve, spread Topping over top of cake. Place in center of oven bake at 250 10 mins. Cool completely before slicing to serve as appetizers. Makes 8-10 appetizers.

Holiday Cheesecake

Ingredients
1 cup plus 2 tablespoons seasoned Italian breadcrumbs
3 tablespoons unsalted butter, melted
15 ounces ricotta cheese
8 ounces Neufchatel w. vegetables
1/2 cup crumbled Gorgonzola cheese
1/2 cup freshly grated Parmesan cheese
3 tablespoons hot sauce, or to taste
1 tablespoon house seasoning, divided
3 tablespoons sun-dried tomato, chopped
1 cup packed basil leaves
1 green onion cut into 1 inch pieces
1/2 cup roasted garlic & onion jam
1 tablespoon hot water

Method
Spray a 9 inch springform pan with nonstick cooking spray. Mix 1 cup bread crumbs and butter in small bowl until blended. Press onto bottom of pan.

Combine cheeses, hot sauce and half the house seasoning in food processor. Cover and process until smooth. Remove 2 cups cheese mixture to medium bowl and fold in the sun-dried tomatoes; set aside.

Add 1 cup basil, green onion, remaining 2 tablespoons bread crumbs and house seasoning to mixture in processor and process until finely chopped. Spoon basil mixture over bread crumb layer in pan; spread with spatula until level. Carefully spoon sun-dried tomato mixture over basil layer; spread with spatula until level. Cover with plastic wrap and refrigerate; at least 8 hours or overnight.

Remove the cheesecake from the springform pan and transfer to a serving platter.

Combine the jam and water in a small bowl and stir until smooth. Pour the jam mixture over the top of the cheesecake. Serve with crackers.
