First of all, here in Cyprus, wives do not take husbands on a picnic. It's the other way around. We husbands/fathers take the family on a picnic. We buy a lamb's leg (deboned and cubed), lamb chops, chicken pieces and/or chicken meat cubed. Wife takes all the ingredients for a nice green salad. When we go to the picnic area, we light the bbq (charcoal or dry wood pieces). When the flames die and charcoal is covered with a thin layer of whitish ash, we put the pieces of meat on metal skewers (shish), the chops and chicken pieces on a metal gril and start cooking them over the bbq. Meanwhile wife/mother prepares a nice seasonal salad: lettuce, celery stalks etc. and dress it with lemon juice and olive oil. We warm the oval shaped pitta (pide). We sit down and enjoy our shish-kebaps etc. Of course we drink some beer, wine, brandy, or raki / ouzo. The last thing to be cooked over the dying fire is hellim/halloumi; a local cheese. It is delicious when grilled. Finally we make our Turkish coffee by placing the pot (cezve) right on the charcoal. Coffee tastes best when it is cooked slowly over low heat.

Along with the chicken, you could take along cold macaroni potato salad, coleslaw, lemonade. I make a tomato-basil pie that goes well with the chicken.
Oven-Fried Picnic Chicken
2/3 cup buttermilk
8 chicken breast halves (6 pounds)
1 cup Corn Flakes cereal
1cup all-purpose flour
2 envelopes (1 ounce each) ranch dressing mix (dry)
Cooking spray
Heat oven to 400ºF. Cover large cookie sheet with heavy-duty aluminum foil.
Pour buttermilk into shallow glass or plastic bowl. Add chicken; turn to coat. Let stand 5 minutes. Place cereal, flour and dressing mix (dry) in blender. Cover and blend on medium speed until mixture becomes a coarse powder. Transfer to resealable plastic bag. Remove chicken from buttermilk; discard buttermilk. Place chicken in cereal mixture. Seal bag; shake to coat. Place chicken on cookie sheet. Spray with cooking spray. Bake about 55 minutes or until juice of chicken is no longer pink when centers of thickest pieces are cut.
Do-Ahead Tip Bake it the night before, then pack it up for a picnic in the park the next day!

Sliced roast beef, thick slices of sharp cheddar and crusty bread. Fruit and veggies for the side or gourmet chips. Chewy, soft, bakery cookies for dessert.
Or try an Asian noodle type recipe in take out containers. I make a pound of linguine. The sauce is chicken broth, peanut butter and soy sauce (I eyeball it, but 1 cup broth, 1/2 cup peanut butter and soy sauce to taste should do it). Then, slice whatever veggies you like. I use thin onions, pea pods and julienne carrots with chicken breast. Toss it together. It's good hot or room temperature.

Big Italian sandwiches. Ham, turkey, provolone, veggies, and pesto. Then grab some mixed olives from the deli at the grocery store. Maybe a non-mayo pasta salad. Grab a bottle of wine and you're set!
Don't forget the corkscrew!

what a lovely idea. Keep it simple. How about some shrimp cocktail, brie cheese, french bread, fresh butter, strawberries with cream and a bottle of good wine? Just be sure to keep the shrimp well chilled. If you are not into seafood, how about a pasta salad full of nice crisp veggies

If you have a Trader Joes go there for little goodies. Nice chilled white wine and things like olives and cheese, cheese breads, spreads on crackers - end with cheescake.

If your husband like salty stuff,make him a prosciutto and provolone sandwiches with a Greek salad and you should have a BIG Greek salad with artichoke hearts and feta cheese.And for dessert is yummy shortbread cookies with drizzled chocolate icing and for the drink, you should have a peach cooler for you guys.I hope the food will make you happy!Enjoy!!!

if its just you and your hubby... do a traditional southern pic-nic. fry some chicken; boneless if you prefer. make a little potato salad, biscuits, and apple pie for dessert. bring along a jug of sweet tea to drink. find a sunny spot, spread your blanket on the ground and enjoy.

for a picnic.the lightest food ever..get some grapes/apple/ natural juice(orange or whatevre u like), some natural sandwich( bread/turkey/mayo/tomatoes/cheese)u know...and dont 4get the blanket to put on the floor.get 1with great colors(just 2make it more fun)
