Buffalo Mozzarella is made from the milk of an Asian Water Buffalo, no relation to an American Bison (Buffalo). They sort of look like a big cow and have been domesticated for 1000's of years. They are raised and milked all over the world including the U.S. Mozzarella made from their milk taste a little different than when made form cows milk.
