Chicago isn't that great of a city for MMA but there's a gym outside of Chicago in Shaumburg called FLOmma, that i've heard some good stuff about. Also Combat-Do, is in Cicero, which is the gym that Terry Martin fights out of. He's a 3 time UFC competitor btw.
Also there are a couple of GJJ gyms in the city that im sure have MMA teams.

the colleges that the guy reported above me are all large possibilities. another college to evaluate is Xtreme Couture. At XC they prepare Jiu-Jitsu, Boxing, Kick Boxing, Muay Thai, and Wrestling. the only setback however is that Xtreme Couture isn't placed in dowtown Chicago. it somewhat is placed in a suburb approximately 25 minutes from Chicago. 1117 N. important St, Lombard, IL 60148.

Depends what style you like. Gracie has a BJJ school and there is a Samba school that Arlovski attends as well.
