The choke is for cold starts. If riches the fuel mixture to give the engine more fuel to start. It's usually operated by a heat thermostat or electricity.

first choke can be operated in two ways first is manual choke where you used a cable to close or open the unit second is automatic choke where the heat of the water opens it and stay close when the water is cold
when the choke is open the air pass the barrel without restriction or force but when the choke is closed there is force or pressure cause by venturi effect which draws fuel or increases the fuel to the system

It "chokes" off the incoming air flow effectively increasing the richness of the fuel/air combination coming into the engine.

choke is actually controlling the atomization of fuel...now what is atomization,it is the misture ratio of air with fuel.If air is mre your mixture setting is lean and if ir is less your mixture setting is rich.now when some one apply choke,carborater ventury effect change its setting by lessing the throte diameter of butterfly which actually sucks the air.So air suckion become less and your mixture become rich which is easy to ignite.
