I am not aware of any schools that would cover all aspects of auto restoration. Most trade schools would cover the basic service elements needed for restoring a car. The harder part of learning specifics to a particular make, from small seldomly documented details to tracking down hard to find parts could be learned a few places. The best place to learn would depend on what your restoration goal is.

Do you have an older Porsche in need of restoration? Many of the older cars have registries of owners that have meetings and get-togethers. They are often sub-sects of PCA. These (as well as Porsche Club of America) are great resources for all the information aspects of a restoration.

If you are considering doing this kind of restoration professionally, your only real course of learning would be to take a job at a well regarded shop. There are really only a few in the nation that will wind up working on restoration of the most historically significant cars. If you already have the basic skills, then it's a matter of moving on their to work and really learn the find details first hand.
