I like the dictionary definition of science - to know. The rest is how you go about doing this. When you read an original science book you may have the distillation of another scientist's life works, available to you in just so many hours. When you do personal research (perhaps with a microscope) you can see what very few ever notice. In discussions with colleagues, you can know where to look next. The scientific knowledge we now possess came from millions of minds and twice as many eyes, down through the ages. And there is always room for your own fresh contributions.

Without using a dictionary, my definition...
Science is the use of systematic processes to answer questions (hypotheses) about observable or predictable phenomenon while limiting bias. The ultimate goal of science is attainment of the truth.

the use of logic to test hypotheses, to discover the truth of matter and the universe and everything in between.

It should describe the process of doing this though not its implementation or technology.
