Like most wrestlers who have been around for over ten years the Undertaker has switched between heel and face several times. In fact when he first started in WWE he was a heel and had some decent feuds going with popular faces such as Hogan and the Ultimate Warrior. In his corporate ministry days his character crucified, I think it was Ken Shamrock, maybe, and did a lotg of other nasty things. He was also quite the bad *** heel in his biker taker days. There is a chance that Undertaker will switch back to being a heel again, it just depends on what the company need from him, and how long he plans to spend being an active wrestler. Personally I have always liked him better as a heel then a face, since it suits his character better and lets him come up with some nasty insults and one liners that he just really can't use when he's a face. Plus when he is a heel, his matches tend to be more brutal. His face Hell In A Cell Matches being the exception.

He hasn't always been a face. He's had about 6 turns...
1)He debuted at Survivor Series 90 as a heel...
2)Turned Face after keeping Jake Roberts from hitting Elizabeth (which I don't think was ever explained in the
storyline) in 92
3)Turned Heel in 98 when he said he started the fire that burned Kane (The writing team ignored this fact shortly after)
4) Turned Face in 2000 when he debuted as the redneck biker... for some reason.
5)Turned Heel in 01 when he became the angry redneck biker... for the same reason he was just a regular biker I assume.
6)Turned Face as All American redneck biker in 02. It was never explained why though... then in 04 he returned as the Dead man Undertaker again and has been a Face ever since.
And I doubt he'll turn again...

The Undertaker has had quite a career as being a heel. I think he is probably at the point in his career where fans aren't really willing to hate him, much like how the heel angle doesn't work for Hulk Hogan. It doesn't make sense to make him a heel at this point.

The Undertaker was the biggest heel in the company during the days of the Ministry, and the lackluster Coporate Ministry. I believe 'Taker will be a face for the rest of his career.

He hasn't always been a face. a few years ago when he won his 4th heavyweight title from hogan he was a heel. And back around '97-'98 he was a heel, cuz he joined McMahon's faction: The Corporation with his own: The Ministry. to create The CorporateMinistry which was one of the most hated groups in the history of the wwe.

Honestly it depends on how much longer he stays in the WWE. If he is retiring soon (like I suspect) then he will likely not turn heel. I had read a few years back when he turned heel in 2001 that he wanted to play a heel one more time before his final face run which is now ( I think)
