Most hotels in the Houston Area have pools, either indoors or out. Your best bet would really to get a hotel relatively close to activities that you all can go out and do together. It just depends on where you all might be staying and how far (if any) you all are willing to walk and or drive to go and do. There is a lot to go and do in the Galleria area, Midtown, and the Museum District and Zoo. And all are not that far from one another.
If you all get down to the Clear Lake Area, there is Space Center Houston, the Kemah Boardwalk, The San Jacinto Monument, and Galveston Island.
There are so many other places to go and see.
If you are willing to make a "little" drive, this time of year going NW on Hwy 290 is becoming beautiful. The wild flowers are starting to be in bloom. You could go and see the Blue Bell Creameries (Ice Cream). There is also a huge state park in the area (Washington on the Brazos) which is a great place to let kids run around. In the cute little town of Chappell Hill is a sausage factory with a very yummy restaurant inside. It is quite rustic, but cool!

Well, Houston is a BIG area, so it would help to know what part of town your husband will be (you don't want him commuting for an hour at a time to go to some hotel).
Hotels don't have organized activities for kids in Houston... maybe something down by the space center, but for the most part no. Most do have pools.
For example, if you are going to be in the Galleria area, consider staying a little farther away, because prices automatically inflate there. As an example, I saw a Red Roof Inn on Beltway 8 on the west side (6 miles from the Galleria, about 20 minutes in rush hour) for $50 a night and there's a pool. The Beltway will get you all over town as long as you have lots of quarters (it is a tollway).
I used Hotels.com and went from there. You can select hotels by amenities and landmarks.

If you're used to staying at a Hilton, then Hilton it is...you can earn points faster. All our better hotels are kid-friendly - pools and all the usual amenities, plus a Texas-size breakfast! But we really don't have any that is totally kid-oriented.
As for places to go, the ones before me have pretty much covered it.
If the kids are into sports, here's some useful info:

We're going to Houston over spring break (22nd-25th of March).
We're staying, possibly, in the Best Western Heritage. It's a nice hotel with a cheap price. It has an outdoor pool, internet access, and a complimentery breakfast. We've looked at many hotels, give me a price range and preferred amentities, I'll find you a hotel!

Stay in Kemah. The boys will have a lot of kids their age around and lots to do. The Boardwalk Inn is pricey, but it is in the middle of everything. You won't have to drive anywhere. Pool, arcade, games, pizza, rides, boat rides on the Boardwalk Beast and the pirate ship, tons of restaurants, great, free entertainment all over the place including right in front of your balcony. Everything to do in Kemah is within easy walking distance. From your balcony you can: watch the sailboats go by, listen to the bands playing in the evening, watch the street performers eat fire and do tricks, see autos on display (if they are there then), peoplewatch galore and keep an eye on the kids from the comfort of your room. The Houston traffic can be awful, so staying in the thick of things is an amazing timesaver. The locals have a well kept secret. For a fun, romantic Italian dinner and dancing, go to Claudio's Restaurant and Piano Bar on Kipp Street. Kemah is very touristy, but for a week, it's the best place with the most to offer. Have the best food in town and a night of good ol' boy music in a family atmosphere at T Bone Tom's Backyard on HWY 146. These are locals, so step lively when you two step. T Bone offers the best luch deal in town too.
The kids will like Joe's Crabshack. Sit on the deck by the water and dance the Macarena if you dare. Tons of quaint shops are all over Kemah.
From Kemah, you can always get in your car and go to Armand Bayou Nature Center for a bayou tour (15 minutes away from Kemah) and Clear Lake across the bridge from Kemah has boats and watercraft available for rental, sailboats, sea-doos, parasailing, deep sea fishing tours. The park also has fun sports events and festivals. NASA Space Center is also a ten minute drive from Kemah.
Another great choice is to stay in Galveston. The new Schlitterbahn waterpark is fabulous, as is Moody Gardens and there is a lot to do (45 minutes from Houston). Stay at one of the many hotels that has access to the trolley so you won't have to drive around in the Galveston traffic. If you go there, try a free ride on the ferry boat and watch at the front of the boat for the porpoises. Ask for a tour of the captain's quarters. Bring bread or french fries and feed the seagulls from the back of the ferry. They will grab the food right out of your hand. (You may want to steer clear of Crystal Beach with kids that age - it's the local unofficial topless beach and alcohol is allowed there). Stewart Beach is where they can have fun. Great fishing at San Louis Pass if you can get there - you'll need four wheel drive. The hot spot in Galveston is not really at the beach. It's the Strand and Harborside area. Shopping, dining, oil rig tour, museum with tour of the historical Tall Ship Elissa and a slide show of the terrible Great Storm of 1900 (very explicit).
Galleria area is great because the mall has movies, food, incredible shopping and an ice skating rink.
Wherever you go, you'll have a blast, but the traffic is a monster. That's why I recommend Kemah.
If you stay downtown you will have access to the great ball parks and convention center, Vic and Anthony's great steaks, the Zoo, the Theatre district, the museum district, Montrose and Heights area arts and antiques shops. Four Seasons Hotel is great.
Whatever you do, have a plan so you don't waste time trying to decide which way to go and what to do. Stick to one area. It's mind boggling. You have a week. That's long enough to have a sensational time. Wear sunblock.
Mom - if you can, go to the Heights, Montrose, and Midtown areas in the Middle of Houston for quaint shops, antiques, art, etc.
