I volunteered at a local elementary school for their extracurriculars. The elementary school had the students read, color, or do homework for about 20 minutes then they split up into individual classes. Some of the classes that were offered were art, cooking, spanish, theater, and math. Most of these would be difficult for a group with children at both extremes of the age range. I would suggest attempting some minimal mess crafts (coloring with crayons, stamps, stickers, etc.) that don't really involve glue, paint or glitter. Reading a book to the class would be an option. Playing a game such as bingo could also involve the whole class. Showing a movie and then doing an activity based on the movie would be another option. I hope that helps.

You should stock your classroom with things like paper plates to make animal masks and clown masks, yarn to add hair to things, popsicle sticks to make picture frames, a stamp pad or two to make those thumb print animals, lots of paper to have them trace their hands and make flowers with their tracings or other creatures they can come up with, bean bags for playing "hot potato" or tossing into a box or bucket, maybe some egg cartons for them to plant something in and watch them grow (maybe the secretaries or the principal would keep them in their window so they would be safe during the day), and magazines to cut out pictures for collages of their favorite things or to make card using cut out words from the magazines (you can usually get them from the public library free when they discard old issues). Familyfun.com has a lot of ideas. I would suggest introducing one craft idea a day or week and practice it with them, so that they have it down what to do, and then later down the road you put out several different things for them to be creative with, they know what to do and can easily get started being creative. I hope these ideas help!!
