Green food is out, as the Irish cook everything so well done that it comes out an insipid brown or grey. Some simple and quick dishes are soda bread, bacon and cabbage or as a side dish I like beacan bruithe (baked mushrroms with sausage). Boxty, corned beef and cabbage, etc. are pretty well known and will likely show up in droves, as will most potato dishes.
