I just signed a contract with a fitness club yesterday(Thursday) and might want to cancel it due to some issues. The contract says, I have 3 business days to cancel the contract to get the full refund. Since the fitness club is open for business all 7 days of the week, does it mean that I will need to cancel it by Sunday or the definition of a business day remains Monday to Friday and I have the option to cancel by Tuesday.

If they are open for business 7 days a week, you have unitl Sunday - maybe Monday. In some places, the clock doesn't start until the first day AFTER the transaction.
