Mongols is not possessive, it's plural, so it doesn't need an apostrophe. It should read, "...the rebels successfully attacked and overthrew the Mongols."

Is "mooncakes" supposed to be capitalized? Sometimes you do, sometimes you don't. Pick one and stick with it. (Preferably lowercase ... )

This doesn't make sense. It should say something more like ...

They (or The Mongols) decided to celebrate mooncakes on a national level ....

"neighboring Chinese neighborhoods.."

choose a different word for "neighborhoods" such as "towns, areas, townships, cities, settlements, etc"
