You can do a project on how smoking affects the immune system. Or even how second hand smoke affects the immune system.
There is a lot of information about this topic.
You could even do some kind of demonstration and/or have pictures of what smoke does to a person. It could have many dimensions, sure to get an A

Try to look for Dr. Jau-Fei-Chen's video or books about Nutritional Immunology. She also has a video about the immune system and how it works in a very simple uncomplicated way, you can probably formulate an idea from there plus, you can learn a lot too... Good luck! =)

If this is a student science fair project, then I think there are strict rules against projects with living things.
If this is a teacher, then you should know better.
