There are various words that mean teacher or professor (sensei, kyoshi, etc.) but what do you say when referring to yourself as a professor? And what would others call you?
daigaku no kyoshi?
purofessa?
kyoju?

Certainly not sensei when speaking of yourself, correct?

The position is referred to as 'daigaku kyoju' or simply 'kyoju', and that's how you would introduce yourself: "I'm AJ, daigaku (の) kyoju desu."

You cannot use it as a title and say "I'm Kyoju AJ (or AJ kyoju).", and you're right about not referring to yourself as 'sensei'.

Others will usually call you 'sensei' or 'AJ sensei': Sometimes you may be called 'AJ kyoju' on some formal occasions or within your school.

It depends on the occasion, but one way to say it would be to simply say "daigaku de oshiete imasu" meaing "I teach at the university". This would be a humble way to say it - by not disclosing the fact that you are actually a professor.

Others would most likely call you "kyoju" or "sensei".
