We always look for the ones that state on the label "no scent or perfumes" as the become overwhelming. Bounce sheets has one out as does Downy.

There are plenty, just look for the non-scented versions of dryer sheets or liquids, and if you want to go futher, you can search for the plant based liquid softeners and sheets that they sell at health food stores such as Wild Oats, Henry's, Whole Foods Market
I understand how you feel. Some of those scents are strong. Did you know that one half of a fabric softener sheet in the dryer might work just as well for you as a whole dryer sheet?
Also depending on the hardness of your water you may be able to get by with using less that what the instructions say on the bottle or box

There are unscented fabric softener sheets (I think Bounce makes one and there are also store brands). I don't know about liquid.

Use vinegar in the rinse cycle... it softens the clothes, leaves no scent, and eliminates any soap buildup.
Add one cup to the final rinse.
