The begining of "Bittersweet Symphony" by The Verve has a beautiful string symphony sound.
I know its a bit cliche, but I love the music from Pirates of the Carribbean. We played it in band and it is just so fun.

"Eleanor Rigby" by The Beatles has some great strings in it. Really dramatic. Also, the score for Edward Scissorhands by Danny Elfman is beautiful.
