The begining of "Bittersweet Symphony" by The Verve has a beautiful string symphony sound.
I know its a bit cliche, but I love the music from Pirates of the Carribbean. We played it in band and it is just so fun.

Requiem, especially the Confutatis and Lacrimosa, W.A. Mozart;
The Four Season, A. Vivaldi;
Duel of the Fate, O.S.T. Star Wars ep. 1, John William;
Across the Star, O.S.T. Star Wars ep. 2, John William;
And most of John William's work on the Star Wars Trilogy...
Danny Elfman works was also great...

Clint Mansell, he does the music for Darren Aronofsky's films: Requiem for a Dream and The Fountain. Also, if you're into choral music, Eric Whitacre is the man

"Eleanor Rigby" by The Beatles has some great strings in it. Really dramatic. Also, the score for Edward Scissorhands by Danny Elfman is beautiful.
