I just saw an ad for a 20 year old Appaloosa which was described as "bomb-proof." What the heck does that mean?

Makes sense - I kind of assumed that's what it meant, but it was so specific! Like "hey, get this horse if you live in Iraq!"

do not take it too literally. Bombproof means different things to different people. For instance, we bought a "bombproof" 18 yr old (App by the way, but the breed doesn't matter) for my sister. He is extremely quiet and does not spook. We can throw anyone on him. His problem is that he can not leave a group. He is extremely insecure by himself.
We looked at a couple other horses labeled bombproof- one had horrible ground manners and kept trying to kick us (but doesn't spook at all!). Other horses labeled bombproof spooked all the time, but just jumped (didn't run).
All horses will spook sometime. They are prey animals, and something is going to be scary enough to make them run. Bombproof (if labeled correctly) is more like a horse that doesn't spook often and would be safe for a beginner.

It means the horse has been trained and worked thoroughly to make it so she doesn't shy away from anything. Most horses will spook at gunshots, loud noises, sudden movements, deer or other wildlife, strangers, farm equipment, etc. Bomb-proofing means she's been trained enough not to spook that way. It's a good quality for a pleasure horse to have.

Doesn' t mean a thing, I bought a "bomb-poof" horse trained by a "John Lyons certified trainer" (which means nothing either) and it has taken 3 years to train him and he still spooks at everything.
