By what standards do you mean? Here in Texas, a ranch is where cowboy types raise an animal of some sort, be it cows, bulls, horses, pigs, etc. Someone with one dog would not own a "ranch" per se unless maybe they had 40 acres but even then, no one here would refer to their home as a ranch unless they raised animals to market. I have 12 chickens but that doesn't mean I live on a ranch because I don't raise them to sell them and I live on a little over 1 acre of land. I'd say it has to be 20 acres or more where animals are raised to sell on the market or even for your own use.

A Ranch typically raises stock rather than food in plant form.Generally takes use of rangeland moving livestock from one range to another as the growing season and grazing use of the local fauna dictates.A Rancher generally will grow enough of his own feed to winter stock on. A Farmer raises crops and irrigates them and will keep stock at home on the Farm.

You need acrage, livestock, have a federal EIN- since it's a business, and have equipment to work the land.
Or, if you are asking what determines a ranch style house, it's the design from the outside.
