Senor Frogs and there is also a dance club right on the strip...im sure there has been more added since Ive been there. Most stay open into the late night. The Flamingo had some happening ones and there was one right across the street in a shopping mall.

If you stay at an all inclusive resort, they all have the best bars...they keep the beer and booze free flowing!!
otherwise if you are looking for a nice downtown bar...Carlos n Charlies or Senor Frogs all the way!
