Why do we cut DOWN a tree and then chop it UP?
These are just vagaries of the English language.
If you wake UP then obviously you must first FALL asleep.
Physiologically, there is a condition where people are overcome by sleep involuntarily, in which case they may FALL down. Sleep is an almost total relaxation of the muscles of the body. A drunken fool experiences this lack of control and FALLS. This is connected with changes in the brain caused by alcohol.
Similarly there are times when the body itself produces chemicals which affect the brain and it is impossible to keep awake. You then FALL into a STATE of unconsciousness.
Hypnosis is an example of inducing a sleep like condition by auto suggestion which affects the brain. The unsupported body FALLS or slumps if seated.

Because your falling in and out of consciousness. So your falling from being conscious to being unconscious.
I'm not sure this is fact though, this is just my opinion.
EDIT: The falling sensation that kermit above me was talking about is called a myoclonic jerk which happens when your in the hypnagogic state.

I have had plenty of dreams when I just set off to sleep where I wake up having dreampt of falling over.
Anyway=y, I think the falling relates to "falling"into the abyss of the unconscious mind

Sometimes, there is a falling sensation just before you go to sleep.
