Really Good Meatloaf!
Recipe #14676813


6 servings 1½ hours 5 min prep
Change to: servings US Metric
MEAT LOAF
2 lbs ground beef
1/2 lb ground pork
1 onion, minced
1 tablespoon fresh minced garlic (or use 1-1/2 teaspoons garlic powder)
1/2 cup chili sauce or ketchup (or use 1/4 cup of each!)
1/2 cup dry breadcrumbs
2 eggs, slighty beaten
3 tablespoons worcestershire sauce
1-2 teaspoon dried oregano
2 teaspoons dried basil
2 teaspoons seasoning salt (can use white salt)
black pepper
TOPPING
1/3 cup ketchup
brown sugar

Pesto meatloaf

Make up some pesto - I use basil, olive oil, garlic, and salt, but you can find dozens of recipes online.

Make your regular meatloaf - ground beef with breadcrumbs, spices, an egg, etc, and mix it well. Then, roll it out flat so it's about 1/2 to 1 inch thick, and in a strip a bit narrower than the pan is wide.

Spread the pesto over this, and roll it up like a jelly roll. Bake as you normally would.

Also, instead of using just ground beef, mix it 50-50 with ground pork or bulk pork sausage. But mix it really well, because otherwise when you cook it, the different meats will have different colors, and your meatloaf will look really odd.

8 oz can of tomato sauce

2 eggs

1/2 lb of hamburg

1/2 lb of pork

a sleeve of town house crackers

3 tbs of olive oil

1/2 cup of ketchup

3 tbs mustard

1/2 cup of brown sugar





Mix all together except the ketchup, mustard and sugar...put aside / add in a greased loaf pan/ 350* /....bake for 1 1/2 hours, ten minutes before done, mix your ketchup, mustard and brown sugar together and spread on top.....be sure and coat it all over;) good luck!

I usually make string green beans and mashed potatoes for the sides;) don't forget the biscuits or buttered rolls:)

2 pounds ground sirloin, 1/2 pound ground turkey
2 eggs
1 cup crushed up crackers (ritz, saltines, or whatever you like)
1 large can tomato sauce (split in half)
1 pkg lipton onion (or beefy onion,or mushroom-onion) soup
1/8 cup Worcestershire's sauce
1/2 instant rice
1 large onion diced
2 sticks celery diced
1 green pepper diced

Mix all ingredients, pour other half tomato sauce on top, bake 1 1/2 - 2 hours 350 till done
