I know this is simple but you should just tell him. If he doesn't understand then explain it to him. I'd touch on two factors what a lesbian relationship means and the genetic causes of homosexuality.

A woman will know me more or better than another woman. A man can't compare to another woman because she knows what it is like to be me WAY more than any man ever could. Another woman forgets more about what it is to be a woman than any man will ever know.

As far as sex, it's all about attraction. Have him consider the reason why he isn't attracted to men (it will be something to do with not being attracted or repulsed or something). That will have be a good reason why lesbians aren't either.

After that I would go into the genetic reasoning:
We're born this way. The gene cluster responsible for homosexuality has been found on the X chromosome. Along with that, the part of the brain that controls sexuality has been definitively found to control orientation as well. Please feel free to read the books I sourced for explanations...

Also, I don't really suggest giving him a try if you're confident about your orientation. That will not only confuse him but make thim think he has a chance of changing you. One thing you really have to be cautious of is making sure he understands that you can't change. This is why I give you the genetic reasoning. Good luck to you and I hope he understnads. = )

Does he know that you are a lesbian or do you just think that he knows you are a lesbian? If he knows and you think he is looking for a romantic date then decline the offer but ask him if his sister, or some other female friend or relative, is available. This can just be a gentle reminder that you are in fact still a lesbian. Or if he doesn't actually know congratulations you have just broached the subject with him and he does know now.

tell him your a lesbian and go out with him as a friend. Unless you are attracted to him. Then just go out with him and see what happens

You didn't say if you wanted to go out with him. If you do, then go out with him. Just tell him up front that this is only a friendly date. He has no need of knowing your orientation. Go out, have a nice time. enjoy yourself.

i take it you dont mean go out as in hang out, or go out to dinner or something?
like he is intrested in something other than friendship.
if you dont want to come out to someone you have known for years, just say that you cant, you would rather remain friends. i know though, if your not ready to come out to people then dont yet. dont say im gay i cant if you dont want to tell him. if your not out yet, and word spreads like a wildfire, your "friends" really do show their true colors.

How much of a lesbian are you really if you have to ask this question???? If a guy asked me out i would politely smile and say thanks but no thanks and walk away. You dont even owe him any explanations.

well i would say that if you are considering ti then mabey your not gay,but bi. if you have no intrest in guys once so ever then you have to tell him no.but if your not sure go on one date and see how you feel about it!! good luck sweetie!! :)
