"Time change? Can't we just go to "change computer time" and adjust it if it doesn't adjust?"
You're only thinking as if your home computer is the only computer in the world, and you never thought about some time critical computing platform. It is easy to adjust your home computer's clock, but not all computers could be practically adjusted. What do you think if you heard this: A mars probe lost in the space because the time in the earth-based controller and the probe is not synchronized, the probe think that an instruction should be done 3 hours later, while in fact the earth based station meant it to be done 1 hour later. I'll laugh. And how about "obscure" computer, like the handphones or camera, and the "invisible" computer, the machine that controls a manufacturing plant for example.
"Remember the "millenium" scare? Y2K? It went off without a hitch."
Where do you think you're living at that time? Many computing platforms have been made Y2K-compliant before the event, that's why the hitch isn't that big, humans aren't stupid enough to not fix something clearly obvious bug like Y2K. In the past, people use 2 digit year representation because memory was an extremely expensive resource, people doesn't have the luxury of a sparse 4GB RAM and 400 GB of Harddisk, people works in range of kilobytes of diskspace.
"Why do people think the early change this year in putting the clocks ahead is going to be any different?"
It is different. Y2K will reset your time 100 years earlier, while the time adjustment is going to reset your time few hours off. Although few hours seems small compared to the 100 years, daily routine is more important than things that needed macro date function.
"That's why I allways wrote the date in full, 2007 not 07, 1994 not 04, 2001 not 01" <-- old computers do that to save their precious memory, I'm sure you never know there was a time where people is proud for their computer which has an extremely large memory: 64 kilobyte RAM (not Megabyte). Now you laugh at that, but there was a time where it was called as being excessively huge. At year 2000 however, memory has become much cheaper and the memory saving acquired from having 2-digit date is no longer considered significant, that's why most platforms fixed this bug immediately.
I agree people shouldn't make such a fuss, but ignorance is not tolerable.

Yes, it will be easy. But the Patch that MS offers will make the change a little easier. The biggest issue will be in Calendars like in Outlook, since some of these will be adversely affected and may have to be redone

You can do that, but then the computer will automatically adjust itself on the day that it thought was the time change, so you'll have to change it back. I think any calender functions could still be affected, though.
