I am wondering about the physics and or chemistry behind it

The Tapping Pops The Bubbles Inside And Releasing The Containing Of The Bubbles And MAking an "air pocket" inside the can thous allowing the air to flow to the top onse the top is popped.... so basicly you got a air bubble at the bottom liquid on top and once the top is popped they exchange position....so liquid going to the bottom and air bubble to the top and guiving room for the exact amount of foam the can can contain(if your talking about soda)

pops some of the carbon bubbles so it wont spew
