For him.
1. Gears of War
2. Saints Row
3. Call of Duty 2
For a none gaming wife looking into Xbox Arcade might be nice option. Xbox Live Arcade is an online service to distribute video games to Xbox and Xbox 360 owners with games ranging from about $5 to $15 USD. They have alot of older games like Frogger and Mr. Pacman. Even some puzzle games like Bejeweled 2 that I know a lot of ladies like.
Also some racing games might be fun at some point as they can be fun to play as a couple.

Here's a list of great games for your husband:
Oblivion
Gears of War
Call of Duty 3
Rainbow Six: Vegas
Lost Planet
Ghost Recon: Advanced Warfighter 2 (was released only yesterday)
Dead Rising
And for you, I think you may like games that are easy to pick up and play right away, so here it is:
Viva Pinata
Need for Speed: Most Wanted
Burnout Revenge
Oblivion (kind of)
Dead Rising
There you go. I'd also suggest buying Halo 3 and GTA4 when they come out, but it won't be for a while.

For your husband, Gears of War my uncle who is like 34 loves that game along with Lost Planet and possibly Assassin's Creed if it is out. As for you I would have to know what kind of games you like for racing try a Need for Speed, for Action Ninety Nine Nights (a.k.a. N3), for RPG Phantasy Star Universe or The Elder Scrolls 4: Oblivion (is extremely awesome and also owned by my uncle and he has been playing it ever since it came out and is still entertained), for a fighting game something like the Crackdown or Dead or Alive 4, for a horror game Condemned or F.E.A.R., for fantasy try something like Kameo, if you are a Marvel comics fan get Marvel: Ultimate Alliance or Superman Returns, if you get Xbox Live you can download Ms. Pac Man after all I have come to know that most women of all ages love Pac Man and if you don't like Ms. Pac Man download normal Pac Man. Perfect Dark Zero is a good shooter game. If you are a fan of Sonic try the newest one for the 360. Fight Night Round 3 is really fun and interactive. That was all I could think you might like (or possibly your husband).

Get him Gears of War. Without any discussions.
And for the non-gaming Wife, get yourself a Live Gold Membership (or try it 1 Month free after your purchase of the console) with UNO through the Xbox Live Arcade.
Download yourself a few demos and try what games you like.
If you want a full price game, try the cute "Viva Pinata"

I highly recommend The Elder Scrolls IV Oblivion. It's one of the best RPG's ever made.
